Ingredients
- 1 cup (200g) cooked lentils
- ½ cup (50g) breadcrumbs
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 2 tbsp olive oil
Tomato Sauce
- 1 cup (250 ml) tomato passata
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried thyme
- Fresh parsley, chopped for garnish
Instructions
- Mash cooked lentils in a bowl.
- Add breadcrumbs, onion, garlic, smoked paprika, cumin, salt, and black pepper. Combine and form small lentil meatballs.
- Heat olive oil in a pan. Pan-fry lentil meatballs until golden brown. Set aside.
- In the same pan, mix tomato passata, tomato paste, oregano, thyme, salt, and black pepper.
- Simmer sauce briefly.
- Gently place pan-fried lentil meatballs into the sauce.
- Let them simmer for 10-15 minutes for flavors to meld.
- Garnish with fresh parsley and serve.
