Ingredients

  • 1 cup (200g) cooked lentils
  • ½ cup (50g) breadcrumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 2 tbsp olive oil

Tomato Sauce

  • 1 cup (250 ml) tomato passata
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Fresh parsley, chopped for garnish

Instructions

  1. Mash cooked lentils in a bowl.
  2. Add breadcrumbs, onion, garlic, smoked paprika, cumin, salt, and black pepper. Combine and form small lentil meatballs.
  3. Heat olive oil in a pan. Pan-fry lentil meatballs until golden brown. Set aside.
  4. In the same pan, mix tomato passata, tomato paste, oregano, thyme, salt, and black pepper.
  5. Simmer sauce briefly.
  6. Gently place pan-fried lentil meatballs into the sauce.
  7. Let them simmer for 10-15 minutes for flavors to meld.
  8. Garnish with fresh parsley and serve.

Pro Tip: If the meatballs are a falling apart, try adding some water, oil and flour to help them stick.
