Green Curry Tofu

Ingredients
- 1 tbsp coconut oil or vegetable oil
- 1 cup (200g) firm tofu, cubed
- 1 cup (150g) mixed vegetables (bell peppers, zucchini, broccoli, etc.)
- 2 tbsp green curry paste
- 1 can (400ml) coconut milk
- 1 tbsp soy sauce
- 1 tbsp agave nectar – honey or other sirup works too
- Fresh basil leaves for garnish
- Cooked jasmine rice for serving
Instructions
- In a wok or pan, heat coconut oil over medium heat.
- Add cubed tofu and cook until golden brown. Set aside.
- In the same wok, add mixed vegetables and sauté until slightly tender. Feel free to use additional vegetables of your choice.
- Add green curry paste to the vegetables and stir.
- Pour in coconut milk, soy sauce, and agave nectar. Mix well.
- Return the cooked tofu to the wok, ensuring it’s coated in the green curry sauce.
- Simmer for a few minutes to let the flavors meld.
- Ladle the green curry tofu over cooked jasmine rice.
- Garnish with fresh basil leaves for a burst of flavor and aroma.
