Ingredients
- 1 cup (180g) jasmine rice
- 1 tbsp vegetable oil
- 1 onion, chopped
- 2 potatoes, diced
- 2 carrots, sliced
- 2 tbsp curry powder
- 1 tbsp tomato paste
- 3 cups (750ml) vegetable broth
- 2 tbsp soy sauce
- 1 tbsp maple syrup – agave nectar, honey or other sirup works too
- Green peas for garnish
Instructions
- Rinse jasmine rice under cold water until the water runs clear and cook according to package instructions.
- In a large pot, heat vegetable oil over medium heat.
- Add chopped onions, diced potatoes, and sliced carrots. Sauté until onions are translucent.
- Sprinkle curry powder over the vegetables and add tomato paste.
- Stir to coat the vegetables in the curry mixture.
- Pour vegetable broth into the pot and stir well to combine.
- Bring the curry to a simmer, then reduce heat and let it simmer until the potatoes and carrots are tender.
- Add soy sauce, maple syrup or agave nectar, salt, and pepper. Adjust the seasoning to taste.
- Spoon the Japanese curry over the cooked jasmine rice.
- Garnish with green peas for a burst of color and serve.
