Ingredients

  • 1 cups (200g) penne or pasta of your choice
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (400g) of crushed tomatoes
  • 200g vegan ground meat or your preferred meat alternative
  • 1 tsp dried oregano
  • 1 tsp dried mint
Bechamel Sauce
  • 2 tbsp butter
  • 3 tbsp plain flour
  • 1½  cups (350ml) plant milk
  • 2 tbsp nutritional yeast
  • ½ tsp ground nutmeg

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Boil pasta according to package instructions, drain, and toss with olive oil.
  3. Sauté onion and garlic, add meat substitute and cook until browned. Stir in crushed tomatoes, oregano, mint, salt, and pepper. Simmer for 10 mins. Optional: Add pasta water.
  4. Melt butter in a saucepan, whisk in flour, and gradually pour in plant milk while whisking. Stir in nutritional yeast, nutmeg, salt, and pepper. Cook until thickened.
  5. In a baking dish, layer half of the cooked pasta. Spread the tomato-based filling over the pasta and top with the remaining pasta. Pour the béchamel sauce over it.
  6. Sprinkle cheese on top and bake for 30-40 minutes until golden and bubbly.
  7. Garnish with fresh parsley. Allow to cool slightly before serving.

Pro Tip: Not every baking tray is created equal. If you have leftover pasta, filling or sauce, you can mix it in a bowl for a quick and easy lasagna salad.
