Ingredients
- 1 cups (200g) penne or pasta of your choice
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 can (400g) of crushed tomatoes
- 200g vegan ground meat or your preferred meat alternative
- 1 tsp dried oregano
- 1 tsp dried mint
- 2 tbsp butter
- 3 tbsp plain flour
- 1½ cups (350ml) plant milk
- 2 tbsp nutritional yeast
- ½ tsp ground nutmeg
Instructions
- Preheat the oven to 180°C (350°F).
- Boil pasta according to package instructions, drain, and toss with olive oil.
- Sauté onion and garlic, add meat substitute and cook until browned. Stir in crushed tomatoes, oregano, mint, salt, and pepper. Simmer for 10 mins. Optional: Add pasta water.
- Melt butter in a saucepan, whisk in flour, and gradually pour in plant milk while whisking. Stir in nutritional yeast, nutmeg, salt, and pepper. Cook until thickened.
- In a baking dish, layer half of the cooked pasta. Spread the tomato-based filling over the pasta and top with the remaining pasta. Pour the béchamel sauce over it.
- Sprinkle cheese on top and bake for 30-40 minutes until golden and bubbly.
- Garnish with fresh parsley. Allow to cool slightly before serving.
Pro Tip: Not every baking tray is created equal. If you have leftover pasta, filling or sauce, you can mix it in a bowl for a quick and easy lasagna salad.
