Vegetable Fried Rice

Ingredients

  • 2 cups (400g) rice, cooked
  • ⅓ cup (50g) peas
  • ¼ cup (30g) carrots, diced
  • 2 tbsp corn
  • ½ (100g) tofu or edamame beans
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add tofu or edamame, peas, carrots, and corn to the pan. Proportions can be adjusted according to your preference.
  3. Stir-fry until the vegetables are tender and the tofu is lightly browned.
  4. Add the cooked rice to the pan and mix well with the vegetables and tofu.
  5. Pour 2 tbsp of soy sauce over the mixture and continue to stir-fry until everything is evenly coated.
  6. Drizzle 1 tbsp of sesame oil over the fried rice and stir to combine.
  7. Cook for an additional 2-3 minutes to allow the flavors to meld.
  8. Taste and adjust the seasoning if necessary.
  9. Serve the vegetable fried rice hot and enjoy!

Pro Tip: For best results, use firm tofu and pat it dry before frying. Fry it separately with oil and spices for extra crispiness. This step ensures perfect texture before adding the vegetables.
