Ingredients
- 1 zucchini, grated
- 1 onion, grated
- 2 cloves garlic, minced
- ¼ cup (6g) fresh dill, chopped
- ¼ cup (4g) fresh mint, chopped
- ⅓ cup (40g or 5 tbsp) plain flour
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Grate zucchini and onion.
- In a bowl, combine zucchini, onion, garlic, dill, mint, salt, and pepper. Mix well
- Add the flour 2 tablespoons at a time and mix well to form a thick batter.
- Heat olive oil in a pan over medium heat.
- Spoon the mixture onto the pan and shape them into patties.
- Fry until golden brown on both sides.
- Place the fritters on a paper towel to drain excess oil.
- Pair with a tzatziki and serve.
Pro Tip: Preheat the oil in the pan before frying. Place a tbsp of the batter and spread it our with the spoon. Flip when the top starts to solidify.
