Ingredients

  • 1 cup (200g) udon noodles
  • 1 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 4 cups (1 liter) vegetable broth 
  • 3 tbsp miso paste
  • 1 cup (80g) sliced mushrooms (shiitake, cremini or mushroom of your choice)
  • 1 cup (30g) baby spinach
  • 2 green onions, finely chopped
  • 1 sheet nori (seaweed), cut into thin strips
  • Soy sauce to taste

Instructions

  1. Cook udon noodles according to package instructions. Drain and set aside.
  2. In a large pot, heat vegetable oil over medium heat. Add sliced onions, minced garlic, and grated ginger. Sauté until onions are soft and fragrant.
  3. Pour vegetable broth into the pot and bring to a simmer.
  4. Add the miso paste to the pot with the pot with the nori strips. Stir well to combine.
  5. Toss sliced mushrooms into the broth and let them cook for a few minutes until softened.
  6. Add baby spinach to the pot and stir until wilted.
  7. Add the cooked udon noodles to the soup. Stir gently to combine and heat through.
  8. Season the soup with soy sauce to taste. Adjust the seasoning as needed.
  9. Ladle the miso udon soup into bowls and garnish with chopped green onions, nori strips, and a drizzle of sesame oil if desired.

Pro Tip: You don’t need ginger, mushrooms, baby spinach or nori to make this Miso Udon Soup. A simple Miso Udon Soup is often preferred. Experiment with the different ingredients and see what you like.
