Ingredients
- 1 cup (200g) udon noodles
- 1 tbsp vegetable oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 4 cups (1 liter) vegetable broth
- 3 tbsp miso paste
- 1 cup (80g) sliced mushrooms (shiitake, cremini or mushroom of your choice)
- 1 cup (30g) baby spinach
- 2 green onions, finely chopped
- 1 sheet nori (seaweed), cut into thin strips
- Soy sauce to taste
Instructions
- Cook udon noodles according to package instructions. Drain and set aside.
- In a large pot, heat vegetable oil over medium heat. Add sliced onions, minced garlic, and grated ginger. Sauté until onions are soft and fragrant.
- Pour vegetable broth into the pot and bring to a simmer.
- Add the miso paste to the pot with the pot with the nori strips. Stir well to combine.
- Toss sliced mushrooms into the broth and let them cook for a few minutes until softened.
- Add baby spinach to the pot and stir until wilted.
- Add the cooked udon noodles to the soup. Stir gently to combine and heat through.
- Season the soup with soy sauce to taste. Adjust the seasoning as needed.
- Ladle the miso udon soup into bowls and garnish with chopped green onions, nori strips, and a drizzle of sesame oil if desired.
Pro Tip: You don’t need ginger, mushrooms, baby spinach or nori to make this Miso Udon Soup. A simple Miso Udon Soup is often preferred. Experiment with the different ingredients and see what you like.
